In this region, culinary artisans mastered the art of slow-roasting meat over fire pits, which imparted a unique smoky flavor and made the meat delectably tender. This time-honored technique, which often spanned several hours, left the meat succulent and imbued with the rich, smoky essence of the wood.
At our establishment, we’ve endeavored to replicate this classic cooking process. Our award-winning smoker, imported directly from the United States, is meticulously designed to mimic the original Southern fire pits. To achieve the robust smoky flavor synonymous with traditional American barbecue, we use hickory and mesquite woods. The meat is tenderly cooked in the smoker for up to 16 hours, ensuring the flavors are deeply infused.
