He confirms: “The Smoke & Fire Festivals are a brilliant showcase for us chefs and for demonstrating the huge skills of cooking overfire. Many big-name chefs and restauranteurs are taking the elements of barbecue cooking inside – and the results speak for themselves when you take a bite. It’s in the layers of flavour, and the taste profiles of meat, fish and vegetables as they pick up the chargrilled
aroma – they are phenomenal.

“I’m really looking forward to taking to the ‘Feast from the Fire’ stage on the second day at
Ascot,” confirms Matt. “I plan to create some of my favourite dishes, give my top tips and
hopefully inspire more people to barbecue more often in their own backyard. Let’s hope
the British weather is on our side!” he concludes.
